The Chelsea bun was invented around 1700 at the old Chelsea and Pimlico in London, which is where its name comes from. It is said that on the day they were introduced, 50,000 people queued outside the shop to buy one!
So, it’s a historical bun!
While writing A Realisation of Small Joys, I thought why not write about something I love the most? Buns.
The Chelsea bun is simple yet one of the tastiest and yummiest buns anyone can experience. Soft, golden spirals of sweet dough, delicately swirled with a touch of cinnamon and sugar, and baked to perfection.

Easy Chelsea Bun Recipe
Ingredients
• 2 ¾ cups all-purpose flour
• 1 packet (7g) instant yeast
• 2 tbsp sugar
• ½ tsp salt
• ¾ cup warm milk
• 3 tbsp melted butter
• 1 egg
Filling
• 2 tbsp softened butter
• ⅓ cup brown sugar
• 2 tsp cinnamon
• ⅓ cup raisins (optional)
Glaze
• 2 tbsp honey or apricot jam
Instructions:
1. Make the dough: Mix flour, sugar, yeast, and salt. Add milk, butter, and egg. Knead until smooth. Let rise for 1 hour.
2. Prepare the filling: Mix butter, sugar, and cinnamon.
3. Shape the buns. Roll dough into a rectangle, spread filling, sprinkle raisins, roll into a log, and cut into 12 pieces.
4. Second rise. Let the buns rise for 30 minutes.
5.. Bake: Bake at 375°F (190°C) for 20–25 minutes.
6. Glaze: Brush with honey or jam while warm.
